What is freeze-drying?
Freeze-drying, or lyophilisation, takes place at a very low temperature and pressure. These conditions cause sublimation, a process in which water goes from a solid directly into a gaseous state. This means that water – and nothing else – evaporates from the fruit, which does not affect its nutritional value. Freeze-dried fruit does not lose any nutrients, vitamins or minerals. In addition, it retains its natural taste, aroma and colour and is almost indistinguishable from fresh fruit.
